Koottu curry or koottukari is a traditional Kerala curry and an important dish in a sadya(feast). Koottu means the combination and as the name implies, it is a combination of different vegetables. The preparation of this koottu varies from region to region and mostly is made with yam, raw banana/plantain, and brown chickpeas.
Heat kadhai, add 1 tsp oil, add 5 no. curry leaves, 1/2 cup boiled & diced yam, boiled chole, saute well.
Add black sesame seeds (Nutritional Twist), coconut mixture, mix well.
Add water as required, and stir well.
Finally, add 1/4 tsp salt, cover with a lid and cook for another 5 minutes on medium flame.
