Semolina Saffron Halwa Recipe

Kesari halwa is a super delicious, melt in the mouth kind of desert. It contains a kashmiri based spice kesar, which gives this halwa a bright colored, rich look. One of the all-time favourite recipes, this dessert is enjoyed by all ages. It can be given to children as an afternoon snack or as a homemade treat after lunch or dinner as well. As a bonus kesar is a super antioxidant as well.

1/2 Cup(102.0 ml) Milk

10 No.(1.0 gm) Kesar

1.5 Tbsp(19.0 gm) Sugar

1 Tsp(2.0 gm) Cashewnut(Chopped)

1 Tsp(4.0 gm) Raisin

1/8 Tsp(0.25 gm) Green Elaichi(Powder)

1 Tbsp(15.0 gm) Ghee

As Required(50.0 ml) Water
  • To make sugar syrup, take 50ml water in a pan and bring it to boil.

  • Add 1.5 tbsp sugar and allow it to dissolve.

  • Add kesar water and boil till you get an onestrand consistency. Keep this aside.

  • Take another nonstick fry pan and heat it at a low flame.

  • Melt 1 tbsp ghee and then add 1 tsp chopped cashew nut, 1 tsp raisins and 2 tbsp suji.

  • Roast the mixture till golden brown and dry.

  • Add the previously made sugar water and 1/2 cup milk. Stir this well to prevent any lumps.

  • Add 1/8th tsp elaichi powder for a beautiful aroma and flavor.

  • Cook till it starts to come together as a halwa and starts to leave the pan on its sides.

  • Serve warm.
