Kadhi is a traditional Gujarati preparation of a wonderful sweet and spicy curd mixture thickened with besan (gram flour). This protein and calcium rich recipe makes a comforting and easy meal for busy days.
In a bowl, add 1/2 cup curd, 1 tbsp besan, 1 tsp sugar, 1/4th tsp salt and whisk it well.
Heat 1 tsp ghee in a kadai, add 1/4th tsp rai, 1/2 cinnamon stick, 2 cloves, 1/10th tsp methi seeds, 1/4th tsp jeera and saute well
Then add 1/8th tsp hing, 1/2 tsp green chilli paste, 1/8th tsp grated ginger, 4 kadi patta and saute it well.
Slowly add the whisked curd mixture and enough water
Mix it well
Simmer for 5 mins
Garnish with coriander leaves and serve it hot with rice.
