This Green Tomato ketchup is the perfect balance of sweet and sour.
For Spice Bag
In a muslin cloth, add 3 cinnamon stick, 4 cloves, 1/2 tsp coriander seeds, 1/2 tsp rai powder, 1 tsp chopped ginger, 1 tsp red chilli flakes, 2 bay leaves.
Tie and make a potli.
Take vegetable and drain excess water.
Then, combine vegetables with 5 tbsp vinegar, 5 tbsp sugar and prepared spice bag.
Transfer this to a large saucepan and bring to boil.
Simmer it for 15/20 minutes.
Stir frequently until slightly thickened
Pour into sterilized jars and store.
