Goan vegetable curry is a traditional Goan recipe of India, consist of many vegetables providing a pack of nutrients.
Make 2 tsp puree of tomato and onion each. Keep aside.
Steam 5 cauliflower florets, 1 tbsp chopped carrot, 1 tbsp chopped french beans, 1 tbsp peas and 2 tbsp chopped potatoes and keep aside.
Take a kadhai and heat 2 tsp oil.
Add 1/2 tsp mustard seeds, 3 curry leaves, 2 tsp onion paste, 1/4th tsp chopped garlic, 1/4th tsp grated ginger, 1/4th tsp green chilli paste, 2 tsp tomato puree, 1/4th tsp cumin powder, 1/8th tsp haldi, 1/4th tsp coriander powder and 1 tsp tamarind pulp. Saute well.
Add a little water and let it simmer
When it begins to boil, add 1/4th cup coconut milk, 1/4th tsp salt and mix well.
To this mixture add the steamed vegetables, cover and allow it to cook well.
Garnish it with chopped coriander leaves and serve with rice.
