Fried rice is a popular entree at Chinese and other Asian restaurants. This healthy Vegetable Fried Rice is a fun way to get everyone excited to come to the table. Vegetable Fried Rice is great as a meal or a side, flexible, delicious.
Wash and cook 2 tbsp basmati rice and keep aside.
For fried rice,
In a thick bottom pot, heat 2 tsp oil.
Add 1 tsp chopped garlic, 1 tsp chopped ginger, 2 tbsp chopped carrot, 1 tbsp chopped french beans, 1 tbsp chopped green capsicum, 1 tsp chopped green chillies and mix well.
Then add 1/2 tsp salt, 1 tsp soy sauce, 1/2 tsp vinegar and stir well.
Add the cooked rice to the veggies and mix all the ingredients well.
Once mixed, add 2 tbsp chopped spring onion, 1/2 tsp black pepper powder and mix again.
