  • In a pan heat 1 tsp coconut oil, add 1 tsp jeera, add 4 kadi patta, add 1 tbsp grated carrot and saute it.

  • Add 2 tbsp chopped mint leaves, mix well. Switch off the flame and let it cool down.

  • Add 3 tbsp soaked poha, 1 tbsp besan, 1 tbsp rice flour, 1/2 tsp salt and mix well.

  • Add warm water little by little and knead till a smooth dough is formed. The dough will be slightly sticky.

  • Grease a banana leaf or butter paper with oil.

  • Take a medium sized ball and place it on the greased sheet.Flatten it.

  • Pat it evenly with your fingers till its thin.

  • Heat a griddle, brush it with 1/2 tsp coconut oil and carefully add the adai.

  • Roast it on both the sides til light brown.

  • Serve hot.
