Egg fried rice with vegetable gravy is full of healthy fiber, protein, good fat and good carbs and is loaded with vitamins, minerals and antioxidants.
Take 2 tsp corn flour and water, make a slurry.
Cook 2 tbsp basmati rice.
For the egg fried rice
Heat a pan and put 1 tsp oil, 1 tsp chopped garlic, 1 tbsp chopped onion, 1 tbsp chopped spring onion, 1 tbsp chopped capsicum, 1 tbsp chopped red capsicum, 1/4th tsp salt & saute them well.
Crack 1 egg and stir till it gets scrambled.
Add cooked rice and mix it well.
Crush 1/4th tsp black pepper, add 1/4th tsp vinegar and stir it.
For the vegetable gravy
In a kadai, heat 1/4th tsp oil.
Add 1 tbsp chopped spring onion, 2 broccoli florets, 2 tbsp chopped red capsicum.
saute it well.
Add 1/4th tsp vinegar, 1 tsp soya sauce and water.
Add 1/4th tsp salt, corn flour slurry and stir it continuously.
Add 1/4th tsp chopped garlic, 1/4th tsp grated ginger and stir it well.
Serve it hot with egg fried rice.
