The flavor of burnt garlic and protein rich eggs combined in a rice with a variety of vegetables makes a complete healthy meal option.
For making Egg burnt garlic fried rice
Wash and cook 2 tbsp basmati rice and keep aside.
For fried rice,
In a kadhai, heat 1 tsp oil.
Add 1 tsp chopped garlic, 1 tbsp chopped onion, 1 tbsp chopped spring onion, 1 tbsp chopped green capsicum, 1 tbsp chopped red capsicum, 1/4th tsp salt & saute well.
Once the vegetables are mixed, crack 1 egg in it and stir till it gets scrambled.
Add the cooked rice and mix all the ingredients well.
Add 1/4th tsp black pepper powder, 1/4th tsp vinegar and stir well.
Serve hot. Enjoy.
