These Vietnamese sweet potato pancakes are an excellent snack or appetizer served in lettuce wraps. Double the recipe and make it a meal! Made from grated sweet potatoes and spices, they're a versatile dish for any time of day.
In a mixing bowl add 1/2 cup grated sweet potato along with 1 tbsp rice flour, 1 tsp cornflour and 1/4th tsp of some seasonings, such as mango powder, green chilli paste, salt, and black pepper powder.
Mix gently and add water if required.
Heat 1 tsp oil in a pan and put small pancakes in it.
Shallow fry and cook till it crisps.
Now, take a lettuce leaf and spread 1 tbsp tomato ketchup and mayonnaise in it.
Put a pancake and wrap the leaf around it.
