Creamy Pumpkin Soup Recipe

Pumpkin soup is a heartwarming, beautiful, creamy, full-flavoured soup. The natural flavour of pumpkin is delicious enough that not many other ingredients are required. As a bonus, pumpkin is a healthy addition.

1/2 Chopped Cup(47.0 gm) Pumpkin
1/4 Chopped Cup(28.0 gm) Onion
1.0 Tbsp(14.0 gm) Cream
1/2 Chopped Tsp(1.0 gm) Garlic
1/4 Powder Tsp(0.75 gm) Black Pepper
1/4 Tsp(1.0 gm) Salt
1/2 Tbsp(6.0 gm) Butter
150.0 Ml(150.0 ml) Water
  • Take ½ cup chopped pumpkin, boil and mash it into a puree. Keep aside.

  • Heat 1/2 tbsp butter in a frying pan at a low flame, add 1/4 cup chopped onion and sauté.

  • Once the onions start to become transparent, add 1/2 tsp chopped garlic, ½ cup of previously mashed pumpkin, mix properly and then add water.

  • Stir in 1 tbsp cream and allow it to cook.

  • Once the soup starts to simmer, add 1/4th tsp salt along with 1/4th tsp black pepper, mix properly and cook for a few minutes.

  • Take off the flame, pour in a blender and blend to obtain a soup like consistency.

  • Garnish with cream.

  • Serve hot.
