Couscous Vegetable Upma With Oil Recipe

Couscous is a healthier substitute for semolina in this flavourful upma there are loads of vegetables too !

4 Tbsp(61.0 gm) Couscous
1 Tbsp(10.0 gm) French Beans (Chopped)
1 Tbsp(8.0 gm) Onion (Chopped)
1 Tbsp(12.0 gm) Carrot (Chopped)
1 Tbsp(10.0 gm) Capsicum (Chopped)
1 Tsp(2.0 gm) Green Chilli (Chopped)
1 Tsp(2.0 gm) Garlic (Chopped)
1 Tsp(4.0 gm) Urad Dal
1 Tsp(4.0 ml) Lemon Juice
1/4 Tsp(0.93 gm) Rai
4 No.(0.44 gm) Kadi Patta
1/2 Tsp(2.0 gm) Salt
1.5 Tbsp(12.0 ml) Oil
100 Ml(100.0 ml) Water
  • Heat kadhai on a low flame.

  • Add 1.5 tbsp oil, 1/4 tsp rai and allow to crackle.

  • Now add 1 tsp chopped garlic, 1 tbsp chopped onion, 1 tsp chopped green chilli, 4 no. kadi patta, 1 tsp urad dal & saute well.

  • Then add 1 tbsp each of chopped french beans, chopped capsicum and chopped carrot, then, add 1/2 tsp salt and saute well.

  • Put a lid on the kadhai and let it cook for 23 mins .

  • Now add cooked couscous & mix it well, Then add 1 tsp lemon juice, mix it well and let it cook for 2 mins.

  • Serve hot.
