Couscous is a healthier substitute for semolina in this flavourful upma there are loads of vegetables too !
Heat kadhai on a low flame.
Add 1.5 tbsp oil, 1/4 tsp rai and allow to crackle.
Now add 1 tsp chopped garlic, 1 tbsp chopped onion, 1 tsp chopped green chilli, 4 no. kadi patta, 1 tsp urad dal & saute well.
Then add 1 tbsp each of chopped french beans, chopped capsicum and chopped carrot, then, add 1/2 tsp salt and saute well.
Put a lid on the kadhai and let it cook for 23 mins .
Now add cooked couscous & mix it well, Then add 1 tsp lemon juice, mix it well and let it cook for 2 mins.
