Corn Salad Recipe

A perfect summertime salad made with a variety of vegetables, herbs and fresh lemon makes a perfect side with any meal or a a healthy snack.

6 Tbsp(63.0 gm) Sweet Corn

3 Julienne Tbsp(17.0 gm) Cabbage

2 Grated Tbsp(19.0 gm) Carrot

2 Chopped Tbsp(25.0 gm) Tomato

3 Chopped Tbsp(30.0 gm) Capsicum

2 Chopped Tbsp(16.0 gm) Onion

1 Tsp(4.0 ml) Vinegar

0.25 Tsp(0.63 gm) Black Pepper

0.25 Tsp(1.0 gm) Salt
  • Take a mixing bowl, add 3 tbsp julienne cabbage, 2 tbsp grated carrot, 3 tbsp chopped capsicum, 4 tbsp chopped tomato, 2 tbsp chopped onion, 6 tbsp of boiled sweet corn and mix well.

  • To this mix, further add 1/4th tsp salt, 1 tsp vinegar and 1/4th tsp black pepper.

  • Making sure all the ingredients are evenly mixed, scoop out a single portion on a serving plate.

  • Serve chilled.
