Cold Cucumber Tofu Soup Recipe

A perfect summer recipe, this cold soup will make you fall in love with cucumbers ! Tofu adds protein and cucumber adds fiber, curd makes it a probiotic dish perfect to improve gut health !

1 Cup(153.0 gm) Cucumber (Diced)

1 Tbsp(7.0 gm) Tofu (Grated)
ingredients
1 Tsp(0.76 gm) Pudina(Chopped)
ingredients
1/4 Cup(60.0 gm) Curd
ingredients
2 No.(3.0 gm) Garlic
ingredients
1 Tsp(4.0 ml) Lemon Juice
ingredients
1/4 Tsp(1.0 gm) Salt
ingredients
As Required(100.0 ml) Water
  • In a blender add 1 cup diced cucumber, 1/4th cup curd, 2 garlic cloves, 1 tsp lemon juice, 1 tsp chopped pudina, 1/4th tsp salt and a little water.

  • Blend it to liquid consistency.

  • Spread 1 tbsp grated tofu.

  • Serve Chilled.
