Easy and delicious South Indian Coconut Rice! This rice uses freshly grated coconut and minimal spices for that amazing coconut flavor!
Heat kadhai, add 1 tsp cooking oil, 1/4 tsp mustard seeds, 1/2 tsp black gram dal, 1/2 tsp Green gram dal and 10 no.curry leaves, let it crackle.
Now, add 4 no. cashews, 1/2 cup grated coconut and roast well till golden brown.
Then, add 1 cup cooked rice, 0.5 tsp Salt and garnish with coriander leaves.
