This pancake has a great coconut flavor which blends well with the carrots. It is rich in Vitamin A and has good fats.
Cook 2 tsp rice
2 tbsp coconut milk
In a bowl, add cooked 2 tsp rice, 1 tbsp besan, 1 tbsp grated carrot, 2 tbsp coconut milk, 1/2 tsp grated ginger, 1/4th tsp jeera powder, 1/4th tsp black til and 1/4th tsp salt.
Mix all the ingredients well.
In a frying pan, add 1/2 tsp oil and spread the above pancake mixture.
Cover & cook till done.
Flip the pancake and cook on the other side.
Serve it hot.
