Beetroot Rice Coconut Milk Pancake With Oil Recipe

These savoury pancakes are a healthy option that you can make anytime, serve it with tomato ketchup or chutney ! These very easy to make pancakes are rich in fiber and have loads of good fats.

2.0 Tbsp(23.0 ml) Coconut Milk
1 Tbsp(8.0 gm) Beet Root (Grated)
2 Tsp(9.0 gm) Rice
1 Tbsp(10.0 gm) Besan
1/2 Tsp(0.94 gm) Ginger (Grated)
1/8 Tsp(0.29 gm) Ajwain
1/4 Tsp(0.44 gm) Jeera Powder
1/4 Tsp(1.0 gm) Salt
1/2 Tsp(2.0 ml) Oil
  • To prepare the batter, take a mixing bowl, add the cooked rice,1 tbsp besan, 2 tbsp coconut milk and mix well.

  • To this add boiled beetroot, 1/2 tsp grated ginger,1/4 tsp jeera powder,

  • 1/8 tsp ajwain, and 1/4 tsp salt.

  • Mix all the ingredients well.

  • Then heat a pan, add 1/2 tsp oil.

  • Spread the batter evenly, cover & cook and cook from both sides.
