A twist on the classic chicken soup, this Chinese chicken soup is spiced with green chillies, ginger, garlic, vinegar and soy sauce. A blend of carrot, celery and spring onion with chicken makes this soup a complete meal which is delicious with all the right things.
Melt 1/2 tsp butter in a frying pan at a low flame and add 1 tsp chopped garlic.
Once the garlic is cooked and starts simmering, add 1/2 tbsp chopped carrot, 1/2 tbsp chopped celery and 1 tsp chopped spring onion. Sauté on medium to high flame
Once reduced slightly, add chopped chicken and sauté.
Once the chicken is slightly cooked, add a little water.
Allowing the soup to simmer, add chopped green chilly soaked in vinegar, 1 tsp soya sauce, 1/4th tsp salt and 1/4th tsp black pepper powder.
Mix 1/2 tsp cornflour in water and add to the soup as well.
Cover and cook for a few more minutes.
Once the chicken becomes tender, serve hot.
