Steps
- Step 1 For the fried chicken heat 1 tsp oil in a pan
- Step 2 Add 75 gm of fresh boneless chicken pieces and stir fry until cooked
- Step 3 For the curry, first heat 1 tsp oil and add 1 tbsp chopped garlic
- Step 4 Saute until it turns golden brown
- Step 5 Now add 1/8th cup each of julienned onion and capsicum and saute well
- Step 6 Next add 1/2 cup of coconut milk and let it simmer gently
- Step 7 Season with 1/8th tsp salt, 1/4th tsp black pepper powder and add 1 tbsp red Thai curry paste
- Step 8 Mix all the ingredients well, allowing the spices to blend into the curry
- Step 9 Now, add the stir fried chicken and water
- Step 10 Throw in a few basil leaves to garnish
- Step 11 Mix well, cover with a lid & cook for at least 56 minutes more
