Heat 2 tbsp mustard oil in a pan until it starts smoking and turn the flame off and let it cool down to room temperature.
Grind the spice mix ingredients, 5 no. whole dried red chillies, 1/2 tsp of each methi seeds, saunf and black pepper powder, 1 tbsp coriander seeds, 1 tsp rai, 1/4th tsp of each haldi, garam masala and hing, 1/2 tbsp dry mango powder in a mixer/grinder to a fine powder.
Heat the oil again and add 10 no. garlic cloves, 10 no. kadi patta, chicken pieces and cook on a medium flame.
Add the pickle spice mix once the chicken is half cooked followed by 1/2 tsp salt. Stir.
Cook until the chicken is completely cooked.
Turn the flame off and let it cool down to room temperature.
Lipsmacking Chicken Pickle is ready to eat.
