This Cheese Ragi Uttapam Recipe is a twist to the original recipe of a traditional Uttapam. The addition of ragi and lots of cheese makes this Uttapam wholesome making it a great tiffin dish.
Soak 3 tbsp rice and 1 tbsp black urad dal seperately, blend it into a batter and ferment it overnight.
For sesame coconut chutney
In a pan, roast 1 tbsp white til.
Then add the roasted til, 2 tbsp dry coconut in a mixie.
Blend it with little water.
For tempering of the chutney
In a pan, add 1/2 tsp oil, add 1/4th tsp rai, 1 red chilly, 4 curry leaves and 1/8th tsp hing.
Saute it well.
Add it to the chutney.
For preparing the uttapam
In a bowl, add the batter, 2 tsp ragi and mix it well.
Take a frying pan, add 1/2 tsp oil.
Spread the oil on the pan.
Pour the batter and spread it.
Spread 1/2 tbsp grated cheese on the batter.
Cover the pan with a lid & cook it.
Flip the uttapam and cook on the other side.
Serve hot with the sesame coconut chutney.
