To prepare sambhar, first heat 2 tsp oil in a pan.
Add 1/2 tsp rai and let it crackle.
Then add 4 leaves kadi patta, 2 whole red chillies and mix.
Add 1/4th cup each of julienned onion, and diced tomato, 1/2 tsp each of haldi, red chilli powder and 1 tbsp sambhar powder.
Next, add 1 diced drumstick, 2 tbsp each of chopped carrot, brinjal, and pumpkin and mix well.
Season with 1/2 tsp salt.
Add the prepared boiled tur dal and 1 tbsp tamarind pulp.
Cover with a lid and let it cook until all the vegetables are done.
Next, prepare the batter for oats uttapam.
In a mixing bowl, add 3 tbsp oats flour.
To this, 1 tbsp suji, 3 tbsp Nestlé A+ Curd, 1/8th tsp baking powder and 1/4th tsp salt.
Add the required quantity of water and mix well.
Grease a pan with 1 tsp oil and pour sufficient uttapam batter on the pan.
Spread the batter evenly.
Flip and roast.
Finally, put 3 tsp grated cheese on top and serve hot with the prepared sambhar.
