Cheese egg bhurji with vegetables can be a perfect breakfast, lunch or even snack boxes if clubbed with Rotis or bread. It is a protein-rich dense recipe.
In a pan add 1 tsp oil,1/4th tsp jeera,1/4th tsp chopped green chilies,1 tbsp chopped onions,1/4th tsp red chilly powder,1/4th tsp haldi,1/4th tsp salt. Saute well. Then add boiled corn,1 tbsp chopped capsicum, boiled peas,1 tbsp chopped carrots. Mix well.
Crack 1 no. egg. Scramble it well.
Garnish it with 2 tsp cheese and then mix it.
Serve Hot with Chapatis and tomato ketchup. Enjoy.
