Chauli usal is a gravy common in Maharashtra, High in folate, fiber and protein helps in producing and maintain new cells.
First, cook 3 tbsp of chauli or cowpea.
Then in a pan, heat 2 tsp oil.
Add 1/8th tsp mustard seeds and let it crackle.
Add 2 tsp ginger garlic paste, 2.5 tbsp of chopped onion and 2.5 tbsp of chopped tomatoes.
Saute the ingredients well.
Next, add 1/4th tsp haldi, 1/2 tsp each of jeera and dhania powder,1/4th tsp garam masala powder and 1/4th tsp red chilli powder.
Mix well and add enough water.
Add the cooked chauli.
Add 1/8th tsp salt and cover with a lid to cook.
Finally, garnish with 1 tsp chopped coriander leaves and serve with chapati.
