Packed with antioxidant and protein rich veggies and paneer the Roti Sandwich is an ideal tiffin meal for all growing children.
To make the stuffing, melt 1 tsp butter in a frying pan, add 1 tbsp chopped onion,1/2 tsp chopped green chilli and sauté.
Once slightly browned add 1 tbsp chopped tomato, 1 tbsp chopped capsicum, 2 tbsp grated paneer, 1/8th tsp salt, 1/4th tsp chaat masala, sauté properly, take off the flame and keep aside.
To make the roti, take a mixing bowl and add 3 tbsp wheat flour and 1/8th tsp salt.
Adding a little water, knead it into a soft dough.
Rolling it in ball form, coat it very lightly with whole wheat flour, flatten them and make it in a circular roti shape using a rolling pin.
Heat a nonstick tava on a low flame and roast roti on it. Flip and cook well on both sides.
On a fresh frying pan, melt 1 tsp ghee and put the roasted roti. Spread a spoonful of the stuffing in the centre and spread it on one half of the roti along with 1 tbsp of grated cheese.
Cover from the other side and let it cook for a few more seconds.
Take off the pan and cut it in the desired shape.
