Cashew Paneer sabji is a dry recipe rice in protein, fiber and iron which goes well with parathas and naan. Its very easy to make and extremely delicious !
Blend 1 tbsp chopped cashewnut, 1 tsp each of chopped green chilli, and ginger together to make a paste.
Heat kadhai on low flame, add 2 tsp oil, paste, saute well.
Add 3 tbsp chopped tomato, 1 tbsp chopped capsicum and saute.
Now add 1/4th tsp haldi,1/2 tsp dhania powder, 1/4th tsp salt, 1 tbsp chopped coriander leaves and mix well.
Add 2 tbsp paneer cubes, allow to cook for 2 min on medium to high flame.
Serve hot with chapati.
