Cabbage being a cruciferous vegetable is loaded with health benefiting properties. This multi-layered veggie is a storehouse of Vitamins A, B1, B2, B6, E, C, K, and minerals like calcium, iron, iodine, potassium, sulfur, phosphorus and folate. A quick and healthy tiffin box recipe can be given with plain curd or raita.
Take 3 tbsp rice, cook and keep aside.
Melt 2 tsp ghee in a frying pan at a low flame.
Add 1/2 tsp jeera, 2 bay leaves, 3 black peppers, 1 tbsp chopped onion and sauté.
Once golden brown, add 2 tsp chopped carrot, 2 tsp fresh green peas, 1/2 tsp chopped green chilli and 4 tbsp chopped green cabbage.
Allow it to cook until the vegetables are well done.
Add the previously cooked rice, sprinkle 1/4th tsp salt and give it a good mix.
Garnish with coriander.
