Broccoli Avocado Soup Recipe

100 Ml(100.0 ml) Water
1 Tsp(4.0 ml) Lemon Juice
1 Tsp(2.0 ml) Olive Oil
1/4 Tsp(1.0 gm) Salt
1 Chopped Tbsp(8.0 gm) Onion
1 Chopped Tsp(2.0 gm) Garlic
2 Chopped Tbsp(25.0 gm) Avocado
1/2 Chopped Cup(28.0 gm) Broccoli
  • Heat 1 tsp olive oil in a medium saucepan over medium heat.

  • Add 1 tbsp chopped onion, stir and cook until soft, then add 1 tsp chopped garlic and cook until lightly browned.

  • Add 1/2 cup chopped broccoli and cook for another 2 minutes and 1/4 tsp salt.

  • Add water and bring to a boil and cook, covered, until bright green and tender, about 20 minutes. Remove from heat, and let cool slightly. Add 1 tsp lemon juice.

  • Add 2 tbsp avocado and blend it to puree

  • Simmer for 5 minutes

  • Serve hot
