A perfect dish to end the week. Add the colourful veggies to bring about the healthy twist and dejunk the traditional favourites of children. Perfect way to incorporate all kinds of vegetables in a child's diet.
In a thick bottom pan add 2 tsp butter.
Once the butter has melted, place 1 white bread and toast on both sides
While the bread is on the pan, spread 2 tbsp pizza sauce on one side.
To that sprinkle 1 tbsp chopped yellow capsicum, 1 tbsp chopped red capsicum, 1 tbsp chopped green capsicum, 1 tbsp chopped onion, 4 tbsp grated cheese and 1/2 tsp mixed herbs.
Cover and cook until cheese melts on a low flame.
Slice into two halves and serve hot with sauce.
