Boiled Egg Bhurji Recipe

Boiled Egg Bhaji is super easy and an interesting variation to conventional Anda Bhurji which is an Indian spiced version of scrambled eggs.

1 Tsp(0.92 gm) Coriander Leaves(Chopped)

1/4 Tsp(0.54 gm) Ginger(Chopped)

1/4 Tsp(0.54 gm) Red Chilly(Powder)

1/8 Tsp(0.3 gm) Haldi

1/8 Tsp(0.56 gm) Salt

1/2 Tsp(2.0 ml) Oil
  • Boil 2 eggs, chop and keep aside.

  • In a kadhai, heat 1/2 tsp oil.

  • Add 1/4th tsp ginger and 2 tbsp chopped onion.

  • While mixing, add 1/8th tsp haldi, 1/8th tsp salt, 2 tbsp chopped capsicum, 2 tbsp chopped tomato and 1/4th tsp red chilly powder.

  • Once mixed well, add chopped boiled egg and mix again.

  • Finally add 1 tsp chopped coriander leaves.

  • Serve hot with bread.
