Besan ka halwa is a super delicious, melt in the mouth kind of desert, it has a soft, fudge-like texture. One of the all-time favourite recipes, though not too complicated this one takes love and time to make. It can be given to children as an afternoon snack or as a homemade treat after lunch or dinner as well. Besan is super nutritious due to its higher protein content along with being rich in iron, magnesium, fibre, copper, zinc, vitamin B6 and folate. Ghee is good for health as well when taken in small portions.
Take a thick bottomed pan and heat it at a low flame.
Add 1 tbsp of ghee and 3 tbsp besan.
Mix continuously till slightly dry, so that the besan is evenly roasted and slightly browned.
Once you can smell the nutty aroma, pour 1/2 cup of milk.
While continuously stirring the milk, add 1.5 tbsp of sugar.
Mix this very well to avoid any lumps.
Add the soaked kesar solution and keep stirring for 12 mins.
Add 1/8th tsp green elaichi powder, mixing it evenly till the halwa starts coming together and starts to leave the pan on its sides.
To this halwa add 1 tsp chopped almonds and 1 tsp chopped pista.
