This Beet Bajra Khichdi is a healthy and easy meal option as bajra is known to have a good amount of magnesium and potassium thus helps in maintaining heart health & immunity, veggies present in khichdi balances the nutrients by adding protein antioxidants & fibre.
In a pan, heat 1 tsp oil, add 1/4 tsp jeera and allow to crackle.
Add 2 tbsp of chopped onion and saute till golden brown.
Then, add 1 tbsp of chopped tomato, 1 tbsp of green peas and 1.5 tbsp chopped beetroot and mix well.
Add 1/2 tsp red chilly powder, 1/4 tsp each of haldi and salt and saute.
Next, add cooked bajra and 1 tbsp of chopped coriander leaves on top and mix well.
Cover the vessel and allow to cook.
Serve hot with your choice of accompaniments.
