Baked vegetables is an easy-baked vegetable recipe which is low in calories, rich in fibre and nutrients and awesome in taste. It is a classic continental-style vegetarian main course.

  • Prepreparation

    Preheat oven at 180 degrees for 10 minutes.

  • For garlic bread

    In 1.5 tbsp melted butter, add 1 tbsp of chopped garlic, 1 tbsp chopped coriander leaves and mix well.

  • Apply garlic butter on one side of bread and grill for 10 minutes at 180 degrees.

  • For Vegetables

    In a pan, heat 1 tsp butter.

  • Add in 1 tbsp chopped carrot, 1 tbsp chopped yellow capsicum, 1 tbsp chopped red capsicum, 1 tbsp chopped beans, 4 flowrets of broccoli and stir fry.

  • Keep it aside.

  • For baked vegetables with garlic bread

    In a mixing bowl, add stir fried vegetables, 1.5 tbsp cream cheese, 1/4th tsp mixed herbs, 1/4th tsp red chilly flakes, 1/8th tsp salt, mix it and then add 1 tbsp grated cheese.

  • Bake vegetables at 180 degrees for 10 minutes.

  • Serve hot with freshly baked garlic bread.
