- Step 1 Heat a kadhai with 1.5 tsp oil, add 2 tbsp chopped onion and saute until light brown
- Step 2 Add 1 tbsp white til, 1 tbsp grated dry coconut, 1 tbsp peanuts powder and roast for a minute
- Step 3 Add 1/2 tsp ginger garlic paste, 1/2 tsp haldi, 1/2 tsp red chilli powder, 1/2 tsp dry mango powder, 1/2 tsp chopped coriander leaves, salt for taste and mix it well
- Step 4 Give it a Nestle twist by adding methi seeds
- Step 5 Cool the masala and blend to a smooth paste
- Step 6 In a plate, take brinjal, slit from the centre and stuff with the masala gently
- Step 7 Heat another kadhai, heat 2 tsp oil, add 1/2 tsp rai, 1/8 tsp jeera and saute .
- Step 8 Add the stuffed brinjals, stir it gently, cover and cook until soft
- Step 9 Flip the brinjals inbetween and cook evenly
- Step 10 Serve with bhakri or phulka
