- Step 1 Heat a kadhai with 1.5 tsp oil, add 1/4 tsp jeera and allow it to crackle.
- Step 2 Add 2 tsp chopped onion, 2 tsp chopped tomato and saute until soft
- Step 3 Add 1/2 tsp ginger garlic paste, 1/4 tsp of each red chilli powder, haldi, dhania powder and salt for taste
- Step 4 Add mashed brinjal and mix thoroughly
- Step 5 Cook over low flame until all spices mix well.
- Step 6 Garnish it with 1 tsp chopped coriander leaves
- Step 7 Give it a Nestle twist by adding kasuri methi
- Step 8 Serve hot
