Avial is a south Indian recipe which is popular in kerala and tamilnadu. It is a curry heavily made of coconut along with lot of healthy vegetables making it perfectly nutritious recipe. it is a side dish which is served with boiled rice or steamed rice. This recipe is specially made on the occasion of onam festival.
Heat kadhai, add 1 tsp oil, 1/4th tsp rai, 4 no. kadi patta, saute well.
Then add 1/4th cup julienne french beans, 1/4th cup diced pumpkin, 1/4th cup boiled & diced yam & saute well.
Add 1/4th tsp salt & followed by coconut paste & mix it well.
Then add water & let it simmer. Cover with lid & cook for 5 minutes. Serve hot.
