Ash gourd thoran or kumbalanga is a Kerala style thoran preparation especially made in the month of ‘Karkidakam’. It’s a side dish which is very tasty and nutritious. Ash gourd consists of a lot of moisture content and minute amounts of macronutrient but is super rich in vitamins and minerals like phosphorus, calcium, riboflavin, iron, thiamine, niacin and Vitamin C. Coconut is an excellent source of fat.
Heat 1 tsp oil in a frying pan and add 1/2 tsp rai.
Once the rai starts crackling, add 1/4th tsp chopped green chilli, 4 kadi patta, 1/4th tsp hing, 1/4th tsp haldi, 5 tbsp cut ash gourd, 1/4th tsp salt and sauté well.
Once slightly cooked, add a little water and allow it to simmer.
Cover and cook for a few minutes. Mix in 2 tsp fresh grated coconut.
Serve hot with chapatti.
