Arbi is a vegetable that grows underground, and it’s popularly known as taro root or colocasia roots. Dum arbi is a typical kashmiri recipe which consists of a spicy yoghurt gravy. This unique combination is delicious and finger-licking worthy. It is an excellent vegetable recipe for people with a spicy palate and full of nutrition.
Take a frying pan and heat 1/2 tbsp Oil.
Add 1/4th Cup previously boiled and chopped Arbi and fry it on a medium flame.
Once lightly golden turn over each piece.
Take off the heat once all the arbi pieces are crisp and golden.
Place the fried arbi on a paper towels and keep aside.
Take another pan and heat 1/2 tablespoon Oil.
Add 1/8th cup thinly sliced onions and fry till golden brown. Keep aside.
In a third pan, heat 1/2 tbsp Oil at a low flame and add 1/4th teaspoon cumin seeds.
Once you hear it splutter, add 1 Bay Leaf, 1/2 inch Cinnamon Stick, 1 Black Elaichi and 2 Lavang.
Mix and add 1 tbsp Chopped Onion alongwith 1/2 tsp Ginger Garlic Paste.
Saute till the onions turn transparent.
Now add 1/2 tsp Red Chilly Powder, 1/4th tsp Dhania Powder, 1/4th tsp Haldi, 1/8th tsp Nutmeg Powder.
Saute till you start smelling a powerful aroma of the masalas.
Stir in little water alongwith 1 tbsp Nestlé A+ Curd.
In this simmering and aromatic paste fold in the fried arbi.
Add `/4th tsp salt and previously fried onions.
Garnish with coriander leaves.
Serve hot with chapati or rice.
