Colocassia Dry Vegetable Recipe

Arbi is a vegetable that grows underground, it’s popularly known as Taro root or Colocasia roots. Spicy Arbi Sabji is a punjabi style, north indian vegetable which when crispy and spicy, goes superbly with parathas with a touch of ghee and makes for a scrumptious meal.

1/4 Boiled Chopped Cup(43.0 gm) Arbi
1.0 Chopped Tbsp(13.0 gm) Tomato
1.0 Chopped Tbsp(8.0 gm) Onion
1/2 Chopped Tsp(1.0 gm) Green Chilli
1.0 Chopped Tsp(0.92 gm) Coriander Leaves
3.0 Number(0.33 gm) Kadi Patta
1/4 Powder Tsp(0.54 gm) Red Chilly
0.13 Tsp(0.3 gm) Haldi
1/4 Tsp(0.59 gm) Jeera
1/4 Tsp(0.93 gm) Rai
1/4 Tsp(1.0 gm) Salt
2.0 Tsp(5.0 ml) Oil
60.0 Ml(60.0 ml) Water
  • Heat 1.5 tsp oil in a pan on a low flame.

  • Add 1/4th tsp rai, you should be able to hear a crackle.

  • Add 1/4th tsp jeera, 3 kadi patta and 1 tbsp chopped onions. Saute till it turns transparent.

  • Add 1 tbsp chopped tomatoes and cook till the tomatoes soften slightly.

  • Stir in little water and let it simmer.

  • Add 1/2 tsp chopped green chillies, 1/8th tsp haldi, 1/4th tsp red chilly powder and 1/4th cup boiled chopped arbi.

  • Saute well and add little more water.

  • Cook at a low flame till the water dries up or you get the desired consistency.

  • Mix in 1/4th tsp salt.

  • Garnish with 1 tsp chopped coriander leaves.

  • Serve Hot with chapati or rice.
