Arbi is a vegetable that grows underground, it’s popularly known as Taro root or Colocasia roots. Spicy Arbi Sabji is a punjabi style, north indian vegetable which when crispy and spicy, goes superbly with parathas with a touch of ghee and makes for a scrumptious meal.
Heat 1.5 tsp oil in a pan on a low flame.
Add 1/4th tsp rai, you should be able to hear a crackle.
Add 1/4th tsp jeera, 3 kadi patta and 1 tbsp chopped onions. Saute till it turns transparent.
Add 1 tbsp chopped tomatoes and cook till the tomatoes soften slightly.
Stir in little water and let it simmer.
Add 1/2 tsp chopped green chillies, 1/8th tsp haldi, 1/4th tsp red chilly powder and 1/4th cup boiled chopped arbi.
Saute well and add little more water.
Cook at a low flame till the water dries up or you get the desired consistency.
Mix in 1/4th tsp salt.
Garnish with 1 tsp chopped coriander leaves.
Serve Hot with chapati or rice.
