A fulfilling meal with minimal calories, apple and bell pepper soup is easy to digest. The walnut garnish powers up the soup with the goodness of omega -3.
In a kadhai, heat 1 tsp oil.
Add 1/4th cup each of diced onion and capsicum and saute.
Then, add 1/8th cup of diced tomato, 1 bay leaf, 1tsp chopped garlic and saute well again.
Next, add 1/8th cup of diced apple, 1/4th tsp each of salt and pepper and mix well.
Add 100 ml water, stir, cover the pan with a lid and cook for 3 minutes.
Put off the heat, and puree the mixture with a blender.
Finally, add 1/4th cup diced apple on top and serve in a bowl.
Add a tsp of crunchy walnuts for a nutritional twist.
