Ambat varan is a common maharashtrian preparation that features on a maharashtrian dining table quite regularly. This high protein sweet and sour dal preparation is very easy to make which makes it an ideal choice to fit into a list of comfort meals .
In a kadhai, heat 1 tsp oil then add 1/4th tsp rai, 1/4th tsp jeera, 2 curry leaves, 1/4th tsp hing and 1 tsp ginger garlic paste and saute well.
Add 4 tbsp cooked tur dal and flavor with 1/2 tsp red chilly powder, 1/4th tsp haldi, 1/2 tsp salt and 1 tsp tamarind pulp.
Add 100 ml water and 2 tbsp jaggery powder.
Garnish with 1 tbsp coriander leaves.
Bring to boil and stir well.
