Amaranth Coconut Curry Recipe

1.0 Chopped Cup(31.0 gm) Amaranth Leaves
1/2 Cup(71.0 ml) Coconut Milk
1.0 Chopped Tbsp(8.0 gm) Onion
1.0 Chopped Tbsp(13.0 gm) Tomato
1/2 Chopped Tsp(1.0 gm) Garlic
1/4 Powder Tsp(0.54 gm) Red Chilly
1/4 Tsp(0.6 gm) Haldi
1/4 Tsp(1.0 gm) Salt
1.0 Tsp(3.0 ml) Oil
  • In a kadhai, add 1 tsp oil, 1/2 tsp chopped garlic, 1 tbsp chopped onion and 1 tbsp chopped tomato. Saute well

  • Add 1 cup chopped amaranth leaves and saute well

  • Add 1/4th tsp haldi, 1/4th tsp red chilly powder and 1/2 cup coconut milk. Mix well.

  • Season with 1/4 tsp salt and let it simmer.

  • Serve hot.
