Alu chi aamti is a dish which belongs to maharashtrian cuisine. A healthy and tangy in taste recipe gives the perfect balance of curry and vegetable dish. It is also very nutritious and mainly rich in calcium, And goes perfectly well with plain rice.
In a pan, heat 1 tbsp oil.
Add 1/4th tsp rai, 1/2 tsp chopped green chilli, 6 kadi patta leaves, 1/8th tsp hing an d saute.
Now add 1/2 cup chopped colocasia leaves, boiled peanuts and mix.
Flavor with 1/4th tsp red chilly powder, 1/4th tsp haldi, 1/4th tsp dhania powder and 1/4th tsp salt.
Saute well, add 1/2 tsp ginger garlic paste, 2 tsp grated fresh coconut, 1 tbsp jaggery powder, 1 tsp tamarind pulp.
Now add 2 tbsp boiled chana dal and water as required. Mix well.
Let it simmer.
Serve hot with rice.
