- Step 1
Heat 1 tsp oil in a pan.
- Step 2
To the pan add 1/4th cup diced karela and saute well for 23min. Keep aside.
- Step 3
Heat 1 tsp oil in a pan.
- Step 4
Add panch poran (dry typical Bengali spice mix consisting of – Kalonji, saunf, methi, rai, jeera), add 1 tbsp chopped onion and saute till the onions turn light golden.
- Step 5
Now add 1/4th tsp haldi, 1/4th tsp red chilli powder, 1/4th tsp salt, 1/2 tsp sugar and saute.
- Step 6
Add 2 tbsp chopped potato, 1/4th cup chopped brinjal and mix.
- Step 7
Finish by adding the sauteed karela and give it a mix.
- Step 8
Add water as required, cover and cook until the vegetables are well cooked.
- Step 9
Serve hot with rotis/chapatis.
