Aloo Korela Begun Chochori Recipe

Korela, Aloo Begun Chochori is a highly nutritious Bengali vegetable cooked with antioxidant, bitter gourd, brinjal, and Bengali spices and served with rotis or rice to complete a meal.

1/4 Chopped Cup(22.0 gm) Brinjal
2.0 Boiled Chopped Tbsp(25.0 gm) Potato
1.0 Chopped Tbsp(8.0 gm) Onion
1/4 Tsp(1.0 gm) Methi Seeds
1/4 Tsp(0.64 gm) Saunf
1/4 Tsp(0.73 gm) Onion Seed
1/4 Tsp(0.93 gm) Rai
1/4 Tsp(0.59 gm) Jeera
1/4 Powder Tsp(0.54 gm) Red Chilly
1/4 Tsp(0.6 gm) Haldi
1/2 Tsp(2.0 gm) Sugar

2.0 Tsp(5.0 ml) Mustard Oil
50.0 Ml(50.0 ml) Water
  • Heat 1 tsp oil in a pan.

  • To the pan add 1/4th cup diced karela and saute well for 23min. Keep aside.

  • Heat 1 tsp oil in a pan.

  • Add panch poran (dry typical Bengali spice mix consisting of – Kalonji, saunf, methi, rai, jeera), add 1 tbsp chopped onion and saute till the onions turn light golden.

  • Now add 1/4th tsp haldi, 1/4th tsp red chilli powder, 1/4th tsp salt, 1/2 tsp sugar and saute.

  • Add 2 tbsp chopped potato, 1/4th cup chopped brinjal and mix.

  • Finish by adding the sauteed karela and give it a mix.

  • Add water as required, cover and cook until the vegetables are well cooked.

  • Serve hot with rotis/chapatis.
