Akuri Recipe

Akuri is an all time favourite Parsi style spicy scrambled eggs. It has a packful of spices and fried onions and is cooked for just the right amount of time; not too runny, neither too over cooked. This high protein dish is mostly eaten with a bread bun or chapatti.

1/2 Tsp(0.88 gm) Jeera Powder

1/2 Tsp(1.0 gm) Red Chilly (Powder)

1/4 Tsp(1.0 gm) Green Chilli Paste

1/8 Tsp(0.29 gm) Haldi

1 Tsp(4.0 gm) Butter

1 Tbsp(3.0 gm) Coriander Leaves (Chopped)

1/4 Tsp(1.0 gm) Salt

2 Tsp(7.0 ml) Oil
  • Take a pan and heat 2 tsp oil.

  • Add 1/4th cup chopped onion, 1/4th tsp green chilli paste, 1/4th cup chopped tomato and mix well.

  • Add 1/2 tsp red chilly powder,1/8th tsp haldi, 1/2 tsp jeera powder, 1/4th tsp salt, 1/2 tbsp chopped coriander leaves and saute well.

  • Add 1 beaten egg to the mixture and scramble well.

  • Now add 1 tsp butter and 1/2 tbsp chopped coriander leaves and mix well.

  • Serve hot in a bowl.
