Akuri is an all time favourite Parsi style spicy scrambled eggs. It has a packful of spices and fried onions and is cooked for just the right amount of time; not too runny, neither too over cooked. This high protein dish is mostly eaten with a bread bun or chapatti.
Take a pan and heat 2 tsp oil.
Add 1/4th cup chopped onion, 1/4th tsp green chilli paste, 1/4th cup chopped tomato and mix well.
Add 1/2 tsp red chilly powder,1/8th tsp haldi, 1/2 tsp jeera powder, 1/4th tsp salt, 1/2 tbsp chopped coriander leaves and saute well.
Add 1 beaten egg to the mixture and scramble well.
Now add 1 tsp butter and 1/2 tbsp chopped coriander leaves and mix well.
Serve hot in a bowl.
