My 2 year old kid has very dark urine, is it because he ate beetroot yesterday?

Dark urine could be due to lack of proper hydration and not because of beetroot or any dark colored foods. A child must be hydrated well during the day. Approximately the child needs to consume 1000 -1200 ml of water in a day i.e., 6-7 cups a day. However, consult the doctor too! Try including water in the child’s diet in following ways: - Include plenty of fruits and vegetables in the diet that contain high water content like cucumber, watermelon, oranges, mosambi, tomatoes etc. Encourage the child to consume fresh fruit or vegetable juice. Discourage consumption of colas, sodas, readymade fruit juice drinks. Excite the child by introducing fruit popsicles for them to suck on. These can be a real hit, especially in summers. Add in liquids in the form of soups, curries, broth, buttermilk, coconut water etc. If you feel your child just will not drink plain water, add some lemon wedges and orange slices with mint in water to give it a refreshing flavor.
