- Step 1 Blanch and puree 3/4 cup of pumpkin.
- Step 2 In a heated pan add pumpkin puree, 1 tbsp grated beetroot, 1/4 cup coconut milk, 1/2 tsp grated garlic, 1/2 tsp grated ginger, 1/8 tsp salt,1/8 tsp cumin powder and mix well.
- Step 3 Add water as required to get desired consistency.
- Step 4 Simmer the soup on low flame for 710 minutes, turn off the flame, transfer to a serving bowl.
- Step 5 Give a Nestle Twist by adding sunflower seeds.
- Step 6 Serve warm.
